If there’s anything I’ve learned in recent years, it’s that cauliflower is a true chameleon in the kitchen.

From pizza crust to “macaroni” and cheese, buffalo “wings” and cheesy tots, it seems like there’s nothing cauliflower can’t do. I’ve even had some cauliflower grits — and that’s coming from a Southerner who has been eating grits her whole life.

The key to cauliflower’s magical powers? It’s that mild, somewhat sweet flavor that pairs well with just about anything. On top of that, the texture of this vegetable lends itself to a countless array of cooking methods, giving it the ability to substitute for more carbs than you can count.

I don’t know what carb-hating cook woke up one day and realized that cauliflower could substitute for literally anything, but I wish I could thank them for it. Why? Because I can feel less guilty about smashing a whole pizza when the crust is made of cauliflower.
